Should you find yourself in Salt Lake City...

We probably should have known this, but should you find yourself in Salt Lake City on a Sunday plan to eat out before 6 PM because the choices after that are severely limited. Luckily for us, there was one place open and it is THE place to go, on any night. It's called The Red Iguana and it specializes in true Mexican fare (as opposed to US-Mex of some kind). What you have to try is any dish with mole (pronounced MOE-lay); a sauce made of numerous spices and flavors. We split a chocolate flavored mole over turkey breast. FABULOUS! If you are uncertain, they also have a sampler platter from which you can try all of their different moles; also definitely worth it.
